We made this last night – very yummy. I actually had leftovers of it today over some baked tostitos with fat free cheese and I think I liked it even better that way!
Southwestern Chicken Salad
PER SERVING (1 cup): 170 calories, 4.3 g fat, 3.4 g fiber (without peas)
Ingredients
1 C cooked corn kernels
1C diced tomatoes
1 C frozen green peas, thawed (I left these out – I detest peas!)
1/2 D each red and green pepper
1/3 C canned black beans, drained
2 C cooked cubed chicken breast
1Tbsp olive oil
1/4 C lime juice
2tsp cumin
1 Tbsp chopped cilantro
2 tsp chili powder
1tsp oregano
Directions
Mix all ingredients together and serve over lettuce (we used the 50/50 bagged lettuce).
