Last summer I was scouring Pinterest for a good tortilla rollup recipe. I came across a dozen or so that had all kinds of crazy ingredients or something just didn’t sound good. Finally I found this one… the picture was crappy so I almost passed it up until I saw the second ingredient. RANCH! I am a ranch fanatic so I knew immediately that this was the one for me. And after I made it and took it to a camp out, it was a confirmed hit! I always get compliments on this recipe so I’m happy to share!
Ranch Tortilla Rollups
2 (8 ounce) packages cream cheese, softened
1 package dry ranch dressing mix
1/2 cup red bell pepper, minced
1/2 cup celery, minced
1/4 cup green onion, sliced
deli ham or deli turkey or deli roast beef
6 wrap size flour tortillas (I use the Mission Sun Dried Tomato or Spinach wrap tortillas)
Mix cream cheese with dry ranch dressing mix. Add pepper, celery and green onion. Spread 1/6 of the cream cheese mixture on to a tortilla and then layer with your choice of lunch meat (about 6-7 thin slices per rollup). Starting at one end, roll the tortilla up tightly and wrap in plastic wrap. Refrigerate for at least 6-8 hours and then slice in to 1/2 inch pieces.
